So…a) I really don’t know what to call this. Maybe I’ll think of a fun name and add it later; b) I’d be lying if I said this was a specialty of mine because really, my dad came up with this. It ain’t half-bad! It made it’s way onto my Super Bowl snack list so that’s high praise. Good job, dad. Now to share it with you guys
Ingredients for Fun with Avocados
- Avocado (1 per person eating)
- Chopped yellow pepper (1 for every 4 avocados)
- Chopped red pepper (1 for every 4 avocados)
- Balsamic vinegar
Cut the avocados in half, being careful not to get your knife stuck in the pit (been there, done that). Remove the pit.
If you have a George Foreman grill (or any grill), place the avocados face down on the grill for 3-5 minutes until they become golden brown, warm, and soft.
While the avocados are grilling, mix the red and yellow peppers together.
Remove the avocados from the grill. Ladle about 2-3 tbs. of the peppers onto the centre of the avocado slices.
Drizzles with as much balsamic vinegar as you’d like.
Scoop and enjoy with a spoon!
Please note that you don’t have to grill the avocados, I just prefer to because it gets them soft and I like warmer foods in general. Plus, the contrast between the crunchy, fresh peppers and the soft avocado is lovely!
