I’ve been seeing this all over Pinterest recently and I was very intrigued. You can make “healthy” spaghetti? You can make it from a delicious vegetable?! But surely that takes time and effort and energy. Right?

Wrong.

It’s one of the easiest dishes I have ever made!

I’m not a huge fan of a lot of breakfast foods which, I’ll admit, is weird. Ever since I was old enough to say “No, thank you”, I haven’t eaten breakfast. I used to think this was a great way to trim my eating and, as a teenager, it never affected me. Sadly, people are absolutely right when they say things change as you grow older. As someone who is allergic to caffeine, I can’t have a jolt of java in my system in the mornings. So now, breakfast is key. I like to keep it healthy but filling, especially now that I work out every morning before work. My go-to is whole wheat muffins with peanut butter and bananas but, of late, I have discovered a love for oatmeal. If you’re an oatmeal fan, you’ll know by now that steel cut oats are the way to go. Pork Marsala

Pork Marsala is one of those sly recipes; it seems straightforward on paper but in action it’s a tricky one to perfect. While my presentation was a little off, the taste was pretty good. Personally, I’d rate my attempt with 3 out of 5 stars (shall we use whisks? Let’s use whisks!). A recipe that leaves room for improvement is sometimes just as good as one that turns out perfectly on the first try. Why? Because when I finally do get it right, it will be a particularly savory victory!

Zucchini Boats with Prosciutto

This is one of the tastiest #eatsmart recipes I’ve dabbled in to date! With just a whisper of cheese on top, the rest of this delectable meal is nothing but good ol’, colorful veggies. I got a crunch, a zing, and the warm feeling of fresh goodness with every bite! The best part about this dish is that it’s incredibly versatile. It can serve as a filling main meal for one, an appetizer, cut up into smaller bites and stuck with toothpicks for finger foods, a side dish, or even a small snack to tide you over between meals. It’s safe to say this is officially going to become one of my go-to’s for many occasions (I’m already thinking ahead to Superbowl Sunday, people). The best part? It’s EASY!

Of late, I’ve been trying to embrace the #EatSmart concept. I’ve been eliminating unnecessary oils, calories, and fats wherever possible while indulging in juicy fruits and mildly healthier versions of my old creations. Most people believe that to eat healthy is to deprive oneself of everything tasty. We normally associate terms like “tastes like cardboard” or “rabbit food” with the concept. I’m here to tell you, if you haven’t already heard, that it’s entirely possible to eat smart while enjoying every bite. The trick is knowing what to buy and how to cook it. Case in point is this delicious Salsa Chicken Salad!

This meal started out as Homard a L’Americaine and it was inspired by one of the dozens of fantastic recipes discussed in the book Julie & Julia. We all know how I can’t resist making at least one (or ten) things from a food memoir, and this time choosing was especially challenging! My intentions were so good but then, as they say, shit happens… So we went from Homard a L’Americaine to Lobster Flambé. Deal with it, I promise it’s still delicious!
